The Slim series (a.k.a Effilés in French) are elegant and highly ergonomic. The No.10 Size works well as a pocket knife which is great for filleting small fish, or impressing friends at your next dinner party. All slim knives have a narrow flexible blade, which needs to be cared for properly. The thinness of the blade makes the knife great for filleting fish or fruits, but should not be used for other heavy duty tasks.

We use Sandvik 12C27 modified stainless steel. It is anti-corrosive thanks to the addition of chrome and requires no special maintenance. Its carbon content of at least 0.40% provides an excellent cutting edge and is easily sharpened.
