The Slim series (a.k.a Effilés in French) are elegant and highly ergonomic. The No.12 makes great table knives. All slim knives have a narrow flexible blade, the smallest ones are great to cut fruits and vegetables and the larger ones to fillet fish. Please keep in mind that the Slim knives have a slightly flexible blade and are not designed to be used for heavy-duty tasks. The Beech wood model has a satin grind blade. The Padouk and Olive wood models have a mirror-polished blade.

We use Sandvik 12C27 modified stainless steel. It is anti-corrosive thanks to the addition of chrome and requires no special maintenance. Its carbon content of at least 0.40% provides an excellent cutting edge and is easily sharpened.
